Our Story
Cool Beans started with a simple conviction: that a neighborhood bakery should be a place where the bread is worth showing up for, and the rest of the pantry is worth staying for.
Every loaf is hand-formed and wild-fermented. Every item on our shelves is something we'd keep in our own kitchen. We source from local mills and small producers wherever we can, and we don't cut corners on time, technique, or ingredients.
Located on NE 65th Avenue, we're a gathering place — for a morning croissant, a weekend picnic spread, or the kind of Tuesday-night dinner that doesn't require a recipe.
What We Do
72-hour wild-fermented loaves — country, olive, seeded, and seasonal variations. Baked every morning.
Daily
Croissants, pain au chocolat, Danish — made from scratch each morning with European-style butter.
Oils, vinegars, preserves, flours, and pantry staples from regional and national producers we trust.
Single-origin pour-overs and espresso drinks paired with fresh pastry — the way a morning should start.
Our Standards
Long fermentation. Slow proofing. We let bread do what bread needs to do — no shortcuts, no rush.
When it comes from the Willamette Valley or the Pacific Northwest, we make room for it on our shelves.
We'd rather make ten things right than a hundred things adequately. Same goes for what we sell.
